Carrot falafels
Ingredients (serves 4) : 500 gr of carrots, 2 small red onions, 2 garlic clove, basil, 1 teaspoon of cumin powder, 2 tablespoons of gluten free flour, a pinch of dry yeast, salt to taste, extra virgin olive oil for frying.
Rinse and peel the carrots, cut into small pieces and mix with onions, garlic, basil and cumin using a food mixer.
Get rid of the water in excess of the carrots. Stir in two tablespoon of flour and a pinch of yeast, and let stand for half an hour.
Shape spoonfuls of the falafel mixture into balls and dip in the corn breadcrumb. Let stand again for 15 minutes.
Fry your falafels until gloden brown.
Serve hot.
