Couscous with fish & rocket salad
Ingredients ( serves 4) : 250 gr of precooked corn couscous, 300 gr of fresh mixed fish cut into pieces, rocket salad to taste, salt, extra virgin olive oil, garlic, pepper to taste
Heat the olive oil and brown the garlic in a pan; add the fish, the salt and the pepper, and cook for few minutes.
Simmer with white wine until reduced and keep cooking for 10/15 minutes.
Cook the couscous, add fish and stir to combine.
Serve with fresh rocket salad on top.
This dish is very easy to cook and perfect for summer.
