Lamb burger buns with caramelized italian frying peppers, quail egg and truffle
Ingredients (serves 4) : 4 buns of 60 gr each, 200 gr of lamb loin , salt and pepper, extra virgin olive oil, 4 quail eggs, 150 gr of italian frying peppers, 50 gr of sugar, 25 gr of vinegar, truffle.
For the buns: ricetta per panini
Hand cut the meat using a knife, season with salt,pepper oil and make the burgers with the help of a pastry cutter with 6 cm of diameter.
Slice thinly the frying peppers and caramelize in a pan with sugar and a pinch of salt; simmer with vinegar until reduced.
Cook for 5 minutes.
Heat a pan and cook the meat on one side until roasted. Turn the meat on the other side and break an egg on the top. Repeat this step for all the other burgers. Finish cooking.
Fill the buns with all the ingredients and complete with shaved black truffle.
