Pasta with squid and breadcrumbs
Ingredients (serves 4): 350 gr of gluten free calamarata pasta, 600 gr of squid, 300 gr of cherry tomatoes, 1 garlic clove, extra virgin olive oil, salt, oregano, hot pepper (optional), gluten free breadcrumbs.
Ask your fishmonger to clean the squid for you. At home rinse and cut it into pieces. Heat some oil in a pan and brown the garlic clove for few minutes; add the cherry tomatoes cut into pieces, and save some whole ones for later. Add some oregano, salt and hot pepper, cook over a medium heat for 30 minutes.
In the meanwhile in a pan with oil toast the breadcrumbs. Once the sauce is ready add the breadcrumbs, stir and leave for 10 minutes.
Cook the pasta, add it to the sauce, stir and serve with fresh breadcrumbs sprinkled on top.
