Quinoa sushi

 

Ingredients ( serves 4) : 200 gr of quinoa, 2 tablespoons of rice vinegar (you can also use apple cider vinegar), 4 sheets toasted nori, 1 avocado, 80 gr of smoked salmon, 80 gr of smoked tuna, 3 tablespoons of sugar, a pinch of salt, 1 bamboo sushi mat.

 

In a saucepan melt the sugar, the salt and the vinegar over a low heat. Leave to cool down.

Boil the quinoa and leave to cool down completely. Once cold, season with the vinegar, salt and sugar mixture.

Place a nori sheet on a bamboo sushi mat, spread with a thin layer of quinoa. Be careful to leave uncovered at least a border of 2 cm.

Cut the salmon and the tuna into vertical slices, and dice the avocado.

Begin to tighly wrap the rolls all the way to the end. Wait 5 minutes before to cut your rolls.

Repeat all the procedure alternating the salmon to the tuna.
