Smoked scamorza cheese and cherry tomatoes muffins
Ingredients for 12 muffin: 240 gr of gluten free flour, 30 gr of grated parmesan cheese, 1 packet of yeast permitted, 1 teaspoon of salt, 200 ml of milk, 2 eggs, 60 ml of seed oil, 150 gr of cherry tomatoes, 200 gr of smoked scamorza cheese, 100 gr of black stoned olives , basil, pepper to taste.
Rinse and cut the tomatoes into small pieces; dice the smoked scamorza cheese, and tear basil by hand.
In a bowl mix the flour with the salt,the pepper,the yeast and the parmesan cheese.
Using a different bowl mix the eggs, the milk and the oil.
Stir to combine the two mixtures until smooth. Add the cherry tomatoes, the olives, the cheese and the basil, and mix all the ingredients together.
Place a spoonful of muffin mixture into each muffin case, filling each to just over half way.
Bake in a prehated oven to 180° for 20 minutes.
